Nous sommes signataires depuis 2014 du Pacte Mondial des Nations Unies. Nous nous engageons à intégrer et en promouvoir les dix principes relatifs aux Droits de l’homme, aux Normes internationales du travail, à l’Environnement et à la lutte contre la corruption.

QUALITY & NUTRITION

ENSURING FOOD QUALITY AND SAFETY

In order to guarantee optimal sanitary quality we are currently in the process of ISO 22000 certification. This international standard deals with the management of food safety. It stresses staff skills, continuous monitoring of information concerning food products (new laws, standards, regulations etc.) and the putting in place of the HACCP system.
Our laboratory has ensured its compliance with the AB quality label (organic farming) and its certification (ECOCERT) will be issued by the summer of 2017. Allergen identification is completed for everything referenced on our menu. This information is available for each event.

ADOPTING A RESPONSIBLE PURCHASING POLICY

The whole of our suppliers are involved in and bound by our purchasing charter, in compliance with four main issues: human rights, environment, business ethics, products & services.

ENCOURAGING LOCAL FOOD PRODUCTION

We work with a list of suppliers in Île-de-France, within a 150 km radius, in order to offer a 100% local produce-based menu.
